Fruity Couscous

Preparation Time is 5 minutes
Cooking Time is 10 minutes
Serves 4 to 5

350ml vegetable stock – hot  
40g dried apricots – chopped
40g Sun-Maid California Raisins  
1tbsp fresh parsley, finely chopped  
175g couscous  
2tbsp extra virgin olive oil  
Salt and pepper

1. Put the couscous in a large bowl and add the hot stock. Stir for 30 seconds, then cover with a plate and leave for 5 to 10 minutes. Fluff up with a fork.
2. Drizzle the olive oil over the fluffy couscous and stir in the apricots, raisins and parsley. Season to taste and serve immediately.
