Rainbow Salad Protein Wrap

This recipe is quick and easy to put together and packed full of flavour thanks to a spicy harissa dressing.

Enjoy as a tasty lunch on the go served in a Newburn Bakehouse Gluten Free High Protein Wrap or serve as a dinner option with a green side salad and roasted aubergines! 

– Serves 4 

– 4 x Newburn Bakehouse Protein Wraps
– 1 x 300g pot of hummus
– 10g coriander leaves, chopped
– 1 x 400g tin of cooked green lentils, drained
– 1 x rib of celery1 red chilli
– 1 x large carrot, peeled

For the dressing:
– 1 lemon (juice of)
– 1 tbsp extra virgin olive oil
– 1 tbsp harissa paste
– Salt & pepper

– Coarsely grate the carrot into a mixing bowl
– Add the drained lentils and chopped coriander to the carrot
– Thinly slice the chilli and celery and add to the other ingredients
– Whisk together the dressing ingredients in a separate bowl and add salt and pepper to taste
– Pour the dressing over the salad and stir together to ensure the salad is evenly combined
– Spread a generous dollop of hummus onto the Newburn Bakehouse Protein Wraps and top with 1/4 of the salad mix. Repeat for the other three wraps
– Tuck in and enjoy!
