Serves: 8 | Time: 30 minutes

Ingredients
150g Flahavan’s Irish Quick Oats 
1 small pineapple
5 tbsp vanilla protein powder
1 tsp bicarbonate of soda
1 tsp baking powder
A pinch of salt
150ml milk
1 large egg
2 large egg whites
1 tbsp soft brown sugar
2 tbsp butter or coconut oilFor the lime maple syrup
30ml maple syrup
Juice and zest of 1/2 a lime 

Method
1
/ Peel and slice pineapple into 8 rings, dice the trimmings, and set aside 
2/ Blend Flahavan’s Irish Quick Oats to a flour-like texture, then mix with protein powder, bicarbonate of soda, baking powder, and salt
3/ Whip egg whites to stiff peaks
4/ Combine whole egg and milk with oat mixture, folding in egg whites carefully
5/ Heat a knob of butter in a pan over medium, add a pineapple ring, sprinkle with brown sugar, cook 30 seconds, then flip
6/ Pour 1/2 cup batter over the ring, cook for 1 minute, flip, and repeat with remaining batter
7/ Mix maple syrup with lime zest and juice, drizzle over pancakes, and serve with yogurt.
